Description

A flavorful Moroccan vegetable tagine packed with spices and fresh vegetables.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 carrot, sliced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup chickpeas, cooked
  • 1 cup diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a tagine or large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in cumin, coriander, paprika, turmeric, and cinnamon.
  4. Add carrot, zucchini, and bell pepper. Cook for 5 minutes.
  5. Pour in diced tomatoes and vegetable broth.
  6. Add chickpeas and season with salt and pepper.
  7. Cover and simmer for 25-30 minutes until vegetables are tender.
  8. Garnish with fresh cilantro before serving.

  • Serve with couscous or bread.
