  • 1 cup dried cranberries
  • 1 cup vegetable broth
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2 tbsp olive oil

  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add celery and onion, cook until soft.
  4. In a large bowl, mix bread cubes, cranberries, cooked vegetables, sage, thyme, salt, and pepper.
  5. Pour vegetable broth over the mixture and stir well.
  6. Transfer to a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove foil and bake for 10 more minutes.
