- 4 cups cubed bread (use gluten-free if needed)
- 1 cup dried cranberries
- 1 cup vegetable broth
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 tbsp olive oil
- 1 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- Preheat oven to 350°F (175°C).
- Heat olive oil in a pan over medium heat.
- Add celery and onion, cook until soft.
- In a large bowl, mix bread cubes, cranberries, cooked vegetables, sage, thyme, salt, and pepper.
- Pour vegetable broth over the mixture and stir well.
- Transfer to a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for 10 more minutes.
- Serve warm.
