Description

A hearty vegan potato salad perfect for winter, packed with flavor and nutrients.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 cup vegan mayonnaise
  • 1 tbsp mustard
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp apple cider vinegar
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the potatoes until tender, about 10-12 minutes. Drain and let cool.
  2. In a large bowl, mix vegan mayonnaise, mustard, salt, pepper, and apple cider vinegar.
  3. Add cooled potatoes, celery, red onion, and parsley to the bowl.
  4. Gently toss until all ingredients are well coated.
  5. Chill for at least 1 hour before serving.

Notes
