- 2 cups mixed nuts (walnuts, almonds, cashews)
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/4 cup vegetable broth
- Preheat oven to 350°F (180°C).
- Heat olive oil in a pan and sauté onion, garlic, carrot, and celery until soft.
- Add tomato paste, thyme, rosemary, salt, and pepper. Stir well.
- Mix in breadcrumbs and chopped nuts.
- Add vegetable broth to bind the mixture.
- Press into a greased loaf pan.
- Bake for 45 minutes until firm and golden.
- Let rest for 10 minutes before slicing.
Notes
- Use any combination of nuts you prefer.
- For a gluten-free version, use gluten-free breadcrumbs.
- Can be made ahead and reheated.
