  • 2 cups mixed nuts (walnuts, almonds, cashews)
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup vegetable broth

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Heat olive oil in a pan and sauté onion, garlic, carrot, and celery until soft.
  3. Add tomato paste, thyme, rosemary, salt, and pepper. Stir well.
  4. Mix in breadcrumbs and chopped nuts.
  5. Add vegetable broth to bind the mixture.
  6. Press into a greased loaf pan.
  7. Bake for 45 minutes until firm and golden.
  8. Let rest for 10 minutes before slicing.

Notes

  • Use any combination of nuts you prefer.
  • For a gluten-free version, use gluten-free breadcrumbs.
  • Can be made ahead and reheated.
