Delicious vegan maple pecan bars with a buttery crust and sweet maple-pecan topping.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 1/2 cup vegan butter, cold
- 1/4 cup water
- 2 cups pecans, chopped
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour, granulated sugar, and salt in a bowl.
- Cut in vegan butter until crumbly.
- Add water and mix until dough forms.
- Press dough into a lined baking pan.
- Bake for 15 minutes until lightly golden.
- In a saucepan, combine maple syrup, brown sugar, coconut oil, vanilla, and salt.
- Bring to a boil, then stir in pecans.
- Pour pecan mixture over the crust.
- Bake for 20 minutes until set.
- Cool completely before cutting into bars.
Notes
- Store in an airtight container for up to 5 days.
- For a crispier crust, bake for an extra 5 minutes.
- Use pure maple syrup for best flavor.
