A delicious vegan version of French toast bake, perfect for breakfast or brunch. Easy to make and packed with flavor.

  • 6 slices of thick bread (vegan)
  • 1 cup almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp flaxseed meal (mixed with 3 tbsp water)
  • 1 tbsp coconut oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with coconut oil.
  3. Arrange the bread slices in the dish.
  4. In a bowl, mix almond milk, maple syrup, vanilla extract, cinnamon, and flaxseed mixture.
  5. Pour the mixture evenly over the bread.
  6. Let it soak for 10 minutes.
  7. Bake for 25-30 minutes until golden.
  8. Serve warm with extra maple syrup.

Notes

  • Use stale bread for better absorption.
  • Adjust sweetness by adding more or less maple syrup.
  • Top with fresh fruit or nuts if desired.
