- 1 cup pitted dates, chopped
- 1 cup walnuts, chopped
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 1 cup water
- 1 tbsp apple cider vinegar
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Soak chopped dates in warm water for 10 minutes, then drain.
- Mix flour, baking soda, and salt in a bowl.
- In another bowl, whisk oil, sugar, vanilla, water, and vinegar.
- Combine wet and dry ingredients. Fold in dates and walnuts.
- Pour batter into the pan. Bake for 45-50 minutes.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- For extra richness, add a vegan frosting.
- Replace walnuts with pecans if preferred.
