A moist and flavorful vegan cake made with dates and walnuts.

Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup walnuts, chopped
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup water
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Soak chopped dates in warm water for 10 minutes, then drain.
  3. Mix flour, baking soda, and salt in a bowl.
  4. In another bowl, whisk oil, sugar, vanilla, water, and vinegar.
  5. Combine wet and dry ingredients. Fold in dates and walnuts.
  6. Pour batter into the pan. Bake for 45-50 minutes.
  7. Let cool before slicing.

Notes

  • Store in an airtight container for up to 3 days.
  • For extra richness, add a vegan frosting.
  • Replace walnuts with pecans if preferred.
