Description
A smooth and creamy cauliflower soup made without dairy. It’s vegan, healthy, and packed with flavor.
Ingredients

- 1 medium cauliflower, chopped
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp turmeric (optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add cauliflower, vegetable broth, salt, pepper, and turmeric.
- Bring to a boil, then simmer for 20 minutes until cauliflower is tender.
- Blend the soup until smooth using an immersion blender.
- Stir in coconut milk and adjust seasoning if needed.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Garnish with fresh herbs or roasted chickpeas.
- Use full-fat coconut milk for a creamier texture.
