Description

A smooth and creamy cauliflower soup made without dairy. It’s vegan, healthy, and packed with flavor.


Ingredients

Scale
  • 1 medium cauliflower, chopped
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp turmeric (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add cauliflower, vegetable broth, salt, pepper, and turmeric.
  4. Bring to a boil, then simmer for 20 minutes until cauliflower is tender.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in coconut milk and adjust seasoning if needed.
  7. Serve warm.
