Description

A simple and hearty three bean chili recipe that’s easy to make and packed with flavor.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in chili powder, cumin, and paprika. Cook for 1 minute.
  4. Add diced tomatoes, vegetable broth, and all three types of beans.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot with your favorite toppings.

Notes

  • You can adjust the spice level by adding more or less chili powder.
  • For a thicker chili, simmer longer.
  • Store leftovers in an airtight container for up to 3 days.
