- 2 large sweet potatoes, thinly sliced
- 4 cups kale, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- 1 tbsp olive oil
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté garlic until fragrant.
- Add kale and cook until wilted. Set aside.
- Layer half the sweet potato slices in a baking dish.
- Spread kale mixture over the sweet potatoes.
- Layer the remaining sweet potatoes on top.
- Pour heavy cream evenly over the layers.
- Sprinkle Parmesan cheese, salt, pepper, and nutmeg.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15 minutes until golden.
- Let rest for 5 minutes before serving.
Notes
- Use a mandoline for even sweet potato slices.
- Substitute kale with spinach if preferred.
- For a crispier top, broil for the last 2 minutes.
