Description

A creamy and hearty dish combining sweet potatoes and kale in a rich gratin.


Ingredients

Scale
  • 2 large sweet potatoes, thinly sliced
  • 4 cups kale, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté garlic until fragrant.
  3. Add kale and cook until wilted. Set aside.
  4. Layer half the sweet potato slices in a baking dish.
  5. Spread kale mixture over the sweet potatoes.
  6. Layer the remaining sweet potatoes on top.
  7. Pour heavy cream evenly over the layers.
  8. Sprinkle Parmesan cheese, salt, pepper, and nutmeg.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake for another 15 minutes until golden.
  11. Let rest for 5 minutes before serving.

Notes

  • Use a mandoline for even sweet potato slices.
  • Substitute kale with spinach if preferred.
  • For a crispier top, broil for the last 2 minutes.
