Description

A hearty and nutritious dish combining sweet potatoes and black beans, baked to perfection.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and bake for 25 minutes.
  4. Add the black beans to the baking sheet and mix gently.
  5. Bake for another 10 minutes.
  6. Sprinkle cheese on top if using and bake for 5 more minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • You can add diced onions or bell peppers for extra flavor.
  • For a spicier version, add a pinch of cayenne pepper.
