- 4 large bell peppers
- 1 cup cooked quinoa
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheese
- 1 tsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Preheat oven to 375°F.
- Cut tops off bell peppers and remove seeds.
- Mix quinoa, black beans, corn, tomatoes, cheese, olive oil, garlic powder, cumin, salt, and pepper.
- Stuff peppers with quinoa mixture.
- Place peppers in baking dish and bake for 25 minutes.
- Serve warm.
Notes
- Use any color bell pepper.
- Swap black beans for chickpeas if preferred.
- Add cooked ground meat for extra protein.
