Description

Stuffed bell peppers with quinoa make a nutritious and delicious meal.


Ingredients

Scale
  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheese
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Cut tops off bell peppers and remove seeds.
  3. Mix quinoa, black beans, corn, tomatoes, cheese, olive oil, garlic powder, cumin, salt, and pepper.
  4. Stuff peppers with quinoa mixture.
  5. Place peppers in baking dish and bake for 25 minutes.
  6. Serve warm.

Notes

  • Use any color bell pepper.
  • Swap black beans for chickpeas if preferred.
  • Add cooked ground meat for extra protein.
