Description

Ingredients

  • 1 large sweet potato, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).

  3. Toss vegetables with olive oil, salt, pepper, and thyme.
