- 2 medium zucchinis
- 1 cup cooked quinoa
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers.
- Brush zucchini boats with olive oil and place on a baking sheet.
- In a bowl, mix quinoa, tomatoes, red onion, feta, oregano, salt, and pepper.
- Spoon the quinoa mixture into the zucchini boats.
- Bake for 20-25 minutes until zucchini is tender.
- Serve warm.

- Use leftover quinoa for quicker prep.
- Add cooked chickpeas for extra protein.
- Swap feta with vegan cheese if needed.
