Description

A healthy and delicious dish featuring zucchini boats stuffed with quinoa and other fresh ingredients.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup cooked quinoa
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. Brush zucchini boats with olive oil and place on a baking sheet.
  4. In a bowl, mix quinoa, tomatoes, red onion, feta, oregano, salt, and pepper.
  5. Spoon the quinoa mixture into the zucchini boats.
  6. Bake for 20-25 minutes until zucchini is tender.
  7. Serve warm.

Notes

  • Use leftover quinoa for quicker prep.
  • Add cooked chickpeas for extra protein.
  • Swap feta with vegan cheese if needed.
