- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup grated apple
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, mix pumpkin puree, applesauce, brown sugar, oil, egg, and vanilla.
- Combine wet and dry ingredients. Fold in grated apple.
- Spoon batter into muffin cups, filling 2/3 full.
- Bake 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
Notes
- Use fresh pumpkin puree or canned unsweetened pumpkin.
- Grate the apple just before mixing to prevent browning.
- Store in an airtight container for up to 3 days.
