- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and halved
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in carrots, celery, and bell pepper, cook for 5 minutes.
- Add zucchini and green beans, sauté for another 3 minutes.
- Pour in diced tomatoes and vegetable broth.
- Season with thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
