Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and halved
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in carrots, celery, and bell pepper, cook for 5 minutes.
  4. Add zucchini and green beans, sauté for another 3 minutes.
  5. Pour in diced tomatoes and vegetable broth.
  6. Season with thyme, rosemary, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Serve hot.
