- 1 cup pearl barley
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cups water
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook for 5 minutes.
- Add mushrooms and cook for another 5 minutes.
- Stir in barley, thyme, salt, and pepper.
- Pour in vegetable broth and water. Bring to a boil.
