  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cups water
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook for 5 minutes.
  3. Add mushrooms and cook for another 5 minutes.
  4. Stir in barley, thyme, salt, and pepper.
