A fresh and flavorful Moroccan couscous salad packed with colorful vegetables, herbs, and a zesty dressing.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/2 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup raisins
  • 1/4 cup sliced almonds
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place couscous in a bowl and pour boiling water over it. Cover and let sit for 5 minutes.
  2. Fluff couscous with a fork and let cool.
  3. Add cucumber, bell pepper, red onion, parsley, mint, raisins, and almonds to the couscous.
  4. In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Chill for 30 minutes before serving.

Notes

  • You can substitute quinoa for couscous.
  • Add chickpeas for extra protein.
  • Adjust spices to your taste.
