Description

Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 cup tomato sauce
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange eggplant slices on a baking sheet.
  3. Brush with olive oil and sprinkle with salt, pepper, oregano, and garlic powder.
  4. Bake for 25 minutes or until tender.
