Sweet and crunchy roasted carrots with maple syrup and pecans.

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp maple syrup
  • 1/4 cup pecans, chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper.
  3. Spread carrots on a baking sheet in a single layer.
  4. Roast for 20 minutes, flipping halfway.
  5. Drizzle with maple syrup and sprinkle pecans over the top.
  6. Roast for another 5 minutes.
  7. Serve warm.
