Ingredients

- 1 cup green lentils, cooked
- 1 cup walnuts, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, diced
- 1 cup breadcrumbs
- 2 eggs, beaten
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion, garlic, carrot, and celery until softened.
- Combine cooked lentils, walnuts, sautéed vegetables, breadcrumbs, eggs, tomato paste, and spices in a bowl.
- Press mixture into a greased loaf pan.
- Bake for 45 minutes until firm.
- Let rest for 10 minutes before slicing.
Notes
- Soak lentils for 2 hours before cooking for faster preparation.
- Replace breadcrumbs with gluten-free crumbs if needed.
- Add a glaze of ketchup and maple syrup before baking for extra flavor.
