  • 1 cup green lentils, cooked
  • 1 cup walnuts, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, diced
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion, garlic, carrot, and celery until softened.
  3. Combine cooked lentils, walnuts, sautéed vegetables, breadcrumbs, eggs, tomato paste, and spices in a bowl.
  4. Press mixture into a greased loaf pan.
  5. Bake for 45 minutes until firm.
  6. Let rest for 10 minutes before slicing.

Notes

  • Soak lentils for 2 hours before cooking for faster preparation.
  • Replace breadcrumbs with gluten-free crumbs if needed.
