- 1 cup basmati rice
- 2 cups water
- 1/2 cup dried cranberries
- 1/4 cup chopped almonds
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a pot over medium heat.
- Add rice and toast lightly for 2 minutes.
- Pour in water, salt, pepper, and cinnamon. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Turn off heat and let sit for 5 minutes.
- Fluff rice with a fork and stir in cranberries and almonds.
