Description

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1/2 cup dried cranberries
  • 1/4 cup chopped almonds
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a pot over medium heat.
  3. Add rice and toast lightly for 2 minutes.
  4. Pour in water, salt, pepper, and cinnamon. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Turn off heat and let sit for 5 minutes.
  7. Fluff rice with a fork and stir in cranberries and almonds.
