A simple and flavorful vegetable paella that’s easy to make.
Ingredients

- 1 cup short-grain rice
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup green beans, trimmed
- 1 tomato, chopped
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/4 tsp saffron threads
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in bell pepper, zucchini, and green beans, cook for 5 minutes.
- Add chopped tomato, smoked paprika, turmeric, and saffron, stir well.
- Pour in the rice and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until rice is tender.
- Let it rest for 5 minutes before serving.
Notes
- Use bomba rice for best results.
- Adjust seasoning as needed.
- Add peas or artichokes for extra flavor.
