Ingredients

  • 1 cup short-grain rice
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup green beans, trimmed
  • 1 tomato, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/4 tsp saffron threads
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in bell pepper, zucchini, and green beans, cook for 5 minutes.
  4. Add chopped tomato, smoked paprika, turmeric, and saffron, stir well.
  5. Pour in the rice and vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes until rice is tender.
  7. Let it rest for 5 minutes before serving.
