1 cup chickpea flour
1 cup water
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp turmeric
1/2 tsp garlic powder
1/4 tsp baking powder
1 tbsp olive oil
1/2 cup chopped bell peppers
1/2 cup chopped spinach
1/4 cup chopped onion
Instructions
Preheat oven to 375°F (190°C) and grease a muffin tin.
In a bowl, whisk chickpea flour, water, salt, pepper, turmeric, garlic powder, and baking powder until smooth.
Stir in olive oil, bell peppers, spinach, and onion.
Pour the batter into the muffin tin, filling each cup halfway.
Bake for 20-25 minutes until firm and golden.
Let cool for 5 minutes before removing from the tin.
Notes
Store leftovers in an airtight container for up to 4 days.
Reheat in a toaster oven or microwave before serving.
Add other vegetables like mushrooms or tomatoes if desired.
