- 1 cup water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/4 tsp baking powder
- 1 tbsp olive oil
- 1/2 cup chopped bell peppers
- 1/2 cup chopped spinach
- 1/4 cup chopped onion
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, whisk chickpea flour, water, salt, pepper, turmeric, garlic powder, and baking powder until smooth.
- Stir in olive oil, bell peppers, spinach, and onion.
- Pour the batter into the muffin tin, filling each cup halfway.
- Bake for 20-25 minutes until firm and golden.
- Let cool for 5 minutes before removing from the tin.
Notes
- Store leftovers in an airtight container for up to 4 days.
- Reheat in a toaster oven or microwave before serving.
- Add other vegetables like mushrooms or tomatoes if desired.
