A hearty and nutritious chickpea and vegetable stew, perfect for a healthy meal.

Ingredients

  • 2 cups chickpeas, cooked
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic, cumin, paprika, and turmeric. Cook for 1 minute.
  4. Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Serve hot.
