- 2 cups chickpeas, cooked
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic, cumin, paprika, and turmeric. Cook for 1 minute.
- Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
