Description

Chicken souvlaki delivers juicy grilled skewers bursting with Greek flavors like lemon, garlic, and oregano. This easy recipe turns simple chicken into a family favorite, perfect for weeknight dinners or BBQs.


Ingredients

  • 1.5 lbs boneless chicken breasts, cut into 1.5-inch chunks
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 68 metal skewers (or soak wooden skewers)

Instructions

  1. Marinate: Whisk yogurt, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken chunks. Marinate 30 minutes to overnight in fridge.
  2. Skewer: Thread chicken alternately with peppers and onions.
  3. Grill: Preheat grill to medium-high. Grill 6-8 minutes per side until 165°F internal.
  4. Serve: Rest 3 minutes. Enjoy with tzatziki, pita, and lemon wedges.
