- 1.5 lbs boneless chicken breasts, cut into 1.5-inch chunks
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh lemon juice
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 6–8 metal skewers (or soak wooden skewers)
Instructions
- Marinate: Whisk yogurt, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken chunks. Marinate 30 minutes to overnight in fridge.
- Skewer: Thread chicken alternately with peppers and onions.
- Grill: Preheat grill to medium-high. Grill 6-8 minutes per side until 165°F internal.
- Serve: Rest 3 minutes. Enjoy with tzatziki, pita, and lemon wedges.
