- 1 large sweet potato, diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tbsp olive oil
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups vegetable broth
- 1 lime, juiced
- Fresh cilantro for garnish
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté for 5 minutes.
- Stir in sweet potato, chili powder, cumin, paprika, salt, and pepper. Cook for 2 minutes.
- Add black beans, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
- Stir in lime juice before serving.
- Garnish with fresh cilantro.
