- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1/4 teaspoon salt
- Sliced almonds for decoration (optional)
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Mix in vanilla extract.
- Gradually add flour, almond flour, and salt. Mix until dough comes together.
- Roll dough out on a lightly floured surface to 1/4-inch thickness.
- Cut into star shapes using a cookie cutter. Place on prepared baking sheet.
- Press sliced almonds onto cookies if desired.
- Bake for 12-15 minutes or until edges are lightly golden.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
